Ingredients

9 lasagna noodles

2 cups cooked rotisserie chicken, shredded

2 cups ricotta cheese

2 cups mozzarella cheese, shredded

1 cup Parmesan cheese, grated

3 cups Alfredo sauce (store-bought or homemade)

1 cup fresh spinach, chopped

1 teaspoon garlic powder

1 teaspoon Italian seasoning

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions

Preheat your oven to 375°F (190°C).

In a large pot, bring water to a boil. Add the lasagna noodles and cook according to the package instructions until they reach an al dente texture. Once cooked, drain the noodles and set them aside.

In a sizable mixing bowl, combine the shredded rotisserie chicken, ricotta cheese, chopped spinach, garlic powder, Italian seasoning, salt, and pepper. Mix thoroughly until all ingredients are well combined and evenly distributed.

Pour 1 cup of Alfredo sauce into the bottom of a 9x13 inch baking dish, spreading it out to ensure the bottom is completely covered, which will help prevent the pasta from sticking.

Lay 3 lasagna noodles over the sauce, arranging them in a single layer.

Evenly spread half of the chicken and ricotta mixture over the noodles. Then, sprinkle 1 cup of shredded mozzarella cheese and 1/3 cup of grated Parmesan cheese on top.

Drizzle 1 cup of Alfredo sauce over this layer, making sure to cover it evenly.

Repeat the layering process by placing another 3 noodles on top, then add the remaining chicken mixture, another cup of mozzarella cheese, and 1/3 cup of Parmesan cheese. Follow this with 1 cup of Alfredo sauce poured evenly over the layer.

Finish with the last 3 noodles, ensuring they are aligned neatly. Spread the remaining Alfredo sauce over these noodles, and top with the rest of the mozzarella and Parmesan cheese for a cheesy finish.

Cover the baking dish tightly with aluminum foil. Place it in the preheated oven and bake for 25 minutes.

After 25 minutes, carefully remove the foil and bake for an additional 15-20 minutes, or until the cheese is bubbly and has turned golden brown.

Once baked, allow the lasagna to rest for approximately 10 minutes before slicing into portions; this helps the layers set and makes serving easier.

Just before serving, sprinkle freshly chopped parsley on top for a burst of color and flavor.

                            Prep Time: 30 mins | Total Time: 1 hr 15 mins | Servings: 8

                              - Presentation Tips: When serving, place generous slices of lasagna on individual plates. Garnish with a sprinkle of fresh parsley and an extra drizzle of Alfredo sauce for visual appeal. Enhance your meal with a light side salad for a refreshing contrast!
