Ingredients
  

  • 1 medium head cauliflower, cut into bite-sized florets
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground cumin
  • 0.5 teaspoon garlic powder

  • 8 small corn tortillas
  • 1 cup red cabbage, finely shredded
  • 1 ripe avocado, sliced thinly
  • 0.5 cup fresh cilantro, chopped
  • 0.25 cup fresh lime juice
  • 0.5 cup crumbled feta cheese (optional)
  • 0.25 teaspoon chili powder (optional)

Instructions
 

  • Preheat the Oven: Start by heating your oven to 425°F (220°C) to prepare for roasting the cauliflower.
  • Prepare the Cauliflower: In a large mixing bowl, combine the cauliflower florets with the olive oil, smoked paprika, ground cumin, garlic powder, salt, and pepper. Toss until the florets are evenly coated in the spice mixture.
  • Roast the Cauliflower: Spread the seasoned cauliflower in a single layer on a baking sheet lined with parchment paper. Roast in the preheated oven for 25-30 minutes, or until the cauliflower is fork-tender and beautifully caramelized, turning the florets halfway through to ensure even roasting.
  • Warm the Tortillas: While the cauliflower is roasting, place a skillet over medium heat. Warm each corn tortilla for about 30 seconds on each side until they are soft and pliable. Once warmed, wrap them in a clean kitchen towel to keep them warm and prevent drying out.
  • Assemble the Tacos: Once the cauliflower is roasted, take it out of the oven. For each taco, lay down a few florets of the roasted cauliflower on a warm tortilla. Top generously with shredded red cabbage, slices of avocado, and freshly chopped cilantro. If desired, sprinkle crumbled feta cheese for an added layer of flavor.
  • Finish with Lime: Drizzle fresh lime juice over the stacks of delicious toppings on your tacos. If you enjoy a bit of heat, dust lightly with chili powder for an added kick.
