  • In a medium-sized mixing bowl, whisk together the all-purpose flour, unsweetened cocoa powder, baking soda, and salt until well combined. Set this flour mixture aside.
  • In a large mixing bowl, use a hand mixer or stand mixer to beat the softened unsalted butter with both the granulated and brown sugars. Mix for about 2-3 minutes until the mixture is light in color and fluffy in texture.
  • Add the large egg, vanilla extract, and instant espresso powder to the butter-sugar mixture. Mix thoroughly until all ingredients are well incorporated.
  • Gradually shift the dry flour mixture into the wet ingredients, mixing just until the dough comes together. Take care not to overmix.
  • Using a tablespoon or cookie scoop, place rounded portions of dough onto the prepared baking sheet. Leave about 2 inches of space between each scoop to allow for spreading while baking.
  • Bake in the preheated oven for 10-12 minutes, or until the edges of the cookies are set and the centers look slightly soft. Let the cookies rest on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
  • After the cookies have cooled, take one cookie and scoop a generous portion of coffee or mocha ice cream onto its flat side. Gently press another cookie on top to create a delightful sandwich.
  • Continue the process with the remaining cookies and ice cream until all components are used up.
  • For a luxurious finishing touch, if desired, roll the edges of each ice cream sandwich in dark chocolate shavings. This adds both flavor and a beautiful presentation.
  • Finally, place the assembled ice cream sandwiches in the freezer for at least 30 minutes to allow them to firm up before indulging.
