Instructions
Begin by preheating your oven to 350°F (175°C). Prepare a baking sheet by lining it with parchment paper to prevent sticking.
In a medium-sized mixing bowl, whisk together the all-purpose flour, unsweetened cocoa powder, baking soda, and salt until well combined. Set this flour mixture aside.
In a large mixing bowl, use a hand mixer or stand mixer to beat the softened unsalted butter with both the granulated and brown sugars. Mix for about 2-3 minutes until the mixture is light in color and fluffy in texture.
Add the large egg, vanilla extract, and instant espresso powder to the butter-sugar mixture. Mix thoroughly until all ingredients are well incorporated.
Gradually shift the dry flour mixture into the wet ingredients, mixing just until the dough comes together. Take care not to overmix.
Using a tablespoon or cookie scoop, place rounded portions of dough onto the prepared baking sheet. Leave about 2 inches of space between each scoop to allow for spreading while baking.
Bake in the preheated oven for 10-12 minutes, or until the edges of the cookies are set and the centers look slightly soft. Let the cookies rest on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
After the cookies have cooled, take one cookie and scoop a generous portion of coffee or mocha ice cream onto its flat side. Gently press another cookie on top to create a delightful sandwich.
Continue the process with the remaining cookies and ice cream until all components are used up.
For a luxurious finishing touch, if desired, roll the edges of each ice cream sandwich in dark chocolate shavings. This adds both flavor and a beautiful presentation.
Finally, place the assembled ice cream sandwiches in the freezer for at least 30 minutes to allow them to firm up before indulging.
