            Once the dough has risen, punch it down gently to release air. Divide the dough into 12 equal portions, rolling each piece into a smooth ball. Allow the shaped balls to rest for 10 minutes.

              In a large pot, bring water to a rolling boil and stir in the baking soda. Carefully drop each dough ball into the boiling water for approximately 30 seconds. Use a slotted spoon to retrieve them, letting excess water drain before placing the rolls onto the prepared baking sheet.

                In a small bowl, whisk the egg to create an egg wash. Brush this over each pretzel roll to give them a lovely golden color as they bake, then sprinkle coarse sea salt on top for additional flavor.

                  Bake in the preheated oven for 12-15 minutes or until the rolls are golden brown and have a delicious aroma. Once done, remove them from the oven and allow them to cool slightly before serving.
