Instructions
Begin by heating the olive oil in a large skillet over medium heat. While the oil heats up, season both sides of the chicken breasts generously with salt, freshly ground black pepper, garlic powder, and Italian seasoning, ensuring an even coating.
Once the oil shimmers in the skillet, carefully place the seasoned chicken breasts into the pan. Cook for approximately 5-7 minutes on each side, or until the chicken is beautifully golden brown and has reached an internal temperature of 165°F (75°C) when checked with a meat thermometer.
Once fully cooked, remove the chicken from the skillet and transfer it to a plate, covering it loosely with aluminum foil to keep warm.
In the same skillet, without cleaning it, add the halved cherry tomatoes. Sauté for 2-3 minutes, stirring occasionally, until the tomatoes begin to soften and release their juices, infusing the skillet with flavor.
Return the cooked chicken to the skillet, nestling it among the sautéed tomatoes. Scatter the fresh mozzarella balls on top of the chicken, ensuring they touch the warm chicken and tomatoes.
Cover the skillet with a lid and let it cook for an additional 2-3 minutes, allowing the heat to melt the mozzarella to creamy perfection.
After the cheese has melted, remove the lid and sprinkle the chopped basil over the top of the chicken. Drizzle balsamic glaze artfully over the entire dish for a burst of tangy sweetness.
Serve this delicious Caprese chicken immediately, spooning the vibrant tomato mixture over the chicken for a full flavor experience.
