Instructions
In a large mixing bowl, add the rolled oats, unsweetened shredded coconut, ground chia seeds, and sea salt. Stir well until all dry ingredients are fully mixed together.
In a separate medium bowl, combine the almond butter, honey (or maple syrup), lime zest, and fresh lime juice. Whisk until the mixture is completely smooth and well blended.
Carefully pour the wet mixture into the dry ingredients. Using a spatula or wooden spoon, mix until every ingredient is thoroughly combined. If you're including them, fold in the dark chocolate chips or cacao nibs for added sweetness and texture.
Take about a tablespoon of the mixture and roll it into a ball using your hands. Place the formed energy bites onto a lined baking sheet or a large plate. Continue this process until all of the mixture is rolled into bites.
Once all the bites are shaped, place them in the refrigerator to chill for at least 30 minutes. This will help them firm up and hold their shape better.
Store the finished energy bites in an airtight container in the refrigerator, where they’ll remain fresh for up to a week.
Notes
To enhance the visual appeal, serve the energy bites on a decorative plate, garnishing with a sprig of fresh mint and a light sprinkling of lime zest for a vibrant finish.
