Preheat your oven to 375°F (190°C). Ensure the oven is fully preheated before placing the chicken inside for even cooking.
In a medium saucepan over medium heat, combine the cranberries, orange juice, orange zest, and honey. Cook while stirring occasionally for about 5-7 minutes, or until the cranberries begin to pop and the mixture slightly thickens into a glaze. Once done, remove the saucepan from the heat and set it aside to cool slightly.
Season both sides of the chicken breasts with garlic powder, onion powder, salt, and freshly cracked black pepper, ensuring an even coating for maximum flavor.
In an oven-safe skillet, heat the olive oil over medium-high heat. Once hot, add the seasoned chicken breasts and sear them for about 4-5 minutes on each side until they develop a beautiful golden brown crust.
Once the chicken is nicely seared, carefully pour the cranberry-orange glaze over the top, making sure each breast is evenly coated with the delicious sauce.
Transfer the skillet to the preheated oven and bake for approximately 25-30 minutes, or until the chicken is fully cooked and reaches an internal temperature of 165°F (75°C).
After baking, remove the skillet from the oven and allow the chicken to rest for 5 minutes. This helps retain the juices for a more tender bite.
Before serving, drizzle any remaining glaze from the pan over the rested chicken, enhancing flavor with each bite.
If desired, garnish the dish with chopped fresh rosemary for a burst of color and aromatic flavor.
