Instructions
Begin by finely grating the cucumber. After grating, transfer it to a clean kitchen towel or a piece of cheesecloth. Gather the edges and twist to squeeze out as much excess moisture as possible.
In a medium mixing bowl, combine the thick Greek yogurt, drained cucumber, minced garlic, chopped dill, lemon juice, and olive oil.
Use a spatula or a whisk to mix all the ingredients together thoroughly until well blended. Taste the mixture and adjust the seasoning by adding salt and freshly ground black pepper to your liking.
Once mixed, cover the bowl with plastic wrap or a lid and place it in the refrigerator. Allow the dip to chill for at least 30 minutes.
Just before serving, remove the dip from the fridge, give it a good final stir, and taste again to adjust seasoning if needed.
Notes
For an enticing presentation, serve in a shallow bowl with a drizzle of olive oil and a sprig of dill.
