Begin by preheating your oven to 400°F (200°C). Line a baking sheet with parchment paper to prevent sticking and for easier cleanup.
In a large mixing bowl, combine the ground chicken with the breadcrumbs, grated Parmesan cheese, chopped fresh parsley, minced garlic, beaten egg, salt, black pepper, and red pepper flakes (if using). Use your hands or a spoon to mix the ingredients until just combined; be careful not to overmix.
With clean hands, shape the mixture into meatballs, approximately 1.5 inches in diameter. Place the formed meatballs onto the prepared baking sheet, spacing them evenly apart.
Bake the meatballs in the preheated oven for 18-20 minutes. Ensure the internal temperature reaches 165°F (75°C).
While the meatballs are baking, prepare the honey garlic sauce. In a small saucepan, combine the honey, soy sauce (or tamari), apple cider vinegar, and sesame oil. Heat the mixture over medium heat until it starts to bubble gently.
Once bubbling, reduce the heat to low and let the sauce simmer for about 3-5 minutes. Stir occasionally to prevent sticking.
After the meatballs are done baking, remove them from the oven. Carefully transfer them to a large mixing bowl and drizzle the prepared honey garlic sauce over the top. Gently toss the meatballs in the sauce until they are evenly coated.
To serve, arrange the honey garlic chicken meatballs on a platter or individual plates. Garnish with sesame seeds and sliced green onions.
