Instructions
Preheat your oven to 400°F (200°C) and prepare a baking sheet by lining it with parchment paper for easy cleanup.
In a large mixing bowl, use a whisk to combine the all-purpose flour, granulated sugar, baking powder, and salt thoroughly.
Incorporate the cold, cubed butter into the flour mixture until the mixture resembles coarse crumbs.
Gently fold in the dried cranberries and orange zest.
In a separate medium bowl, whisk together the heavy cream, large egg, and pure vanilla extract until fully combined.
Pour the wet ingredients into the bowl with the dry ingredients and stir gently until just combined.
Turn the dough onto a lightly floured work surface and shape it into a circle about 1 inch thick. Cut into 8 wedges and transfer to the baking sheet.
Bake in the preheated oven for 15-20 minutes, or until golden brown and a toothpick comes out clean.
While the scones are baking, prepare the glaze by whisking together the powdered sugar, orange juice, and additional orange zest.
Once baked, allow the scones to cool for about 5 minutes and drizzle the orange glaze over them before serving.
Notes
Serve warm on a decorative cake stand, garnished with extra orange zest and mint.
