Instructions
Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a large mixing bowl, combine the natural peanut butter and honey or maple syrup until smooth. Add the vanilla extract and mix well.
In a separate bowl, whisk together the rolled oats, almond flour, chia seeds, baking powder, ground cinnamon, and salt until combined.
Fold the dry ingredients into the wet mixture until a cohesive dough forms. If using, fold in the chocolate chips.
Scoop tablespoon-sized portions of dough onto the prepared baking sheet, leaving space between each. Flatten each cookie slightly.
Bake for 10 to 12 minutes, or until the edges are golden brown. Watch closely to avoid overbaking.
Let the cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
Notes
These cookies pair well with milk or coffee. Consider adding fresh fruit for a complete breakfast.
