Begin by rinsing the jasmine rice under cold running water. Continue rinsing until the water runs clear to eliminate excess starch. Once done, drain the rice thoroughly to remove any water.
In a medium saucepan, combine the rinsed jasmine rice with coconut milk, pineapple juice, brown sugar, and salt. Stir the mixture well to ensure all ingredients are evenly combined.
Place the saucepan over medium-high heat and bring the mixture to a vigorous boil. Once boiling, reduce the heat to low, cover the saucepan with a tight-fitting lid, and allow the rice to simmer for 18-20 minutes. Cook until the rice is tender and has fully absorbed the liquid.
After the cooking time has elapsed, remove the saucepan from heat, keeping it covered. Let it sit for an additional 5 minutes to allow the rice to steam and become fluffy.
Once the steaming is complete, use a fork to gently fluff the rice. Carefully fold in the diced fresh pineapple, lime juice, and toasted shredded coconut until evenly distributed. Taste the mixture and adjust the seasoning by adding more salt or brown sugar if desired.
To serve, spoon the warm pineapple coconut rice onto plates or into bowls. Finish the dish by garnishing with fresh cilantro sprigs for a pop of color and added flavor.
