0.5cupalmond butter (or substitute with peanut butter)
0.5cuppure pumpkin puree
0.25cuphoney or maple syrup
1teaspoonpumpkin spice blend
0.5teaspoonpure vanilla extract
0.25cupmini chocolate chips (optional)
pinchsalt
0.25cupchopped nuts (optional)
Instructions
In a large mixing bowl, combine the rolled oats, almond butter, pumpkin puree, and honey (or maple syrup). Use a spatula or spoon to mix until the ingredients are thoroughly combined and you reach a uniform consistency.
Next, add the pumpkin spice blend, vanilla extract, and a pinch of salt into the mixture. Stir until all ingredients are evenly distributed throughout the mixture.
If desired, gently fold in the mini chocolate chips and chopped nuts, ensuring an even distribution for added texture and flavor in every bite.
After mixing, take small portions of the mixture and use your hands to roll them into balls about 1 inch in diameter. This should yield 12-15 bites depending on the size.
Arrange the energy bites on a parchment-lined baking sheet or plate, ensuring they are spaced apart to avoid sticking.
Refrigerate the assembled bites for at least 30 minutes to allow them to firm up and hold their shape.
Once chilled, transfer the energy bites to an airtight container for storage. They can be conveniently kept in the refrigerator for up to one week or frozen for longer-lasting enjoyment.
Notes
For a fun twist, roll the energy bites in shredded coconut or finely ground nuts before chilling.
