Instructions
Begin by heating the olive oil in a large skillet over medium heat. Once the oil is shimmering, add in the diced sweet potatoes and sauté them for about 5-7 minutes, stirring occasionally, until they start to soften and turn golden on the edges.
After the sweet potatoes have softened, push them to one side of the skillet to create space. On the empty side, add the sliced sausage. Cook the sausage for approximately 5-6 minutes, turning occasionally, until it is browned and heated through.
Next, incorporate the chopped red onion and both diced bell peppers into the skillet. Stir the mixture together and continue to sauté for another 5 minutes until all the vegetables are tender and vibrant in color.
Add the minced garlic, smoked paprika, honey, salt, and black pepper to the skillet. Stir vigorously to ensure the honey coats all the ingredients and the spices are evenly distributed, cooking for another 2-3 minutes.
Allow the mixture to cook until the garlic is fragrant and the flavors begin to meld together, taking care not to burn the garlic.
Once cooked, remove the skillet from the heat. Sprinkle chopped fresh parsley over the top for a burst of color and freshness before serving.
