Instructions
In a large mixing bowl, combine the rolled oats, almond butter, honey (or maple syrup), shredded coconut, chopped almonds, vanilla extract, almond extract, and a pinch of salt.
Use a spatula or your hands to thoroughly mix the ingredients together until evenly combined.
Once the mixture is well integrated, fold in the mini chocolate chips, if you're using them, and mix again to distribute them evenly.
Cover the bowl with plastic wrap and refrigerate the mixture for about 30 minutes.
After chilling, take small portions of the mixture and roll them into balls, aiming for about 1 inch in diameter for each bite.
Line a baking sheet with parchment paper and carefully place the energy bites on the sheet, spaced apart to ensure they’re free to set.
For a decorative touch, roll the rolled bites in extra shredded coconut or chopped almonds to coat them before storing.
Return the coated energy bites to the refrigerator for an additional 15 minutes to fully set and hold their shape.
